I believe that baked potatoes don’t get enough credit for what they are. As a caterer in the Midlands, I make these lovely dishes given any opportunity. They can be a great side dish with a bit of sour cream and chives or a main dish with other extras like cheese and bits of bacon tossed on top. And when I speak of baked potatoes, I do mean one that is just placed on a rack in an oven – not wrapped in foil which is a steamed potato. I occasionally get a wild craving at odd times (11PM, for example) and will throw a potato in my convection oven. For some reason, the late-night baked potato needs only a generous sprinkle of lemon juice (yes, lemon juice) with lots of ground black pepper and some salt to taste wonderfully satisfying. My husband used to think it was absolutely crazy to have one as a late snack but I’m proud to say I’ve converted him to my way of thinking. They’re filling, low in fat and calories if not laden with butter or sour cream, and most importantly: they taste great!
